
One wonderful consequence that has come out of living with Zach (though certainly not the most notable) is that we have really honed in on our sauce repertoire. There are days where our fridge has little else other than an array of salsas, dips, and sauces. And to be fair, if you have a vehicle for all of these condiments, you don’t need much else in life. We tend to keep chips on standby for emergency snacking and sauce maneuvering, so you could say that we have become condiment connoisseurs.
And, having a curated library of sauces to pull from can take even the most basic meals up a notch. After a 9-to-5 day, it’s nice not to have to fuss as much with marinades or seasonings when you are trying to throw dinner together. With just four ingredients and minimal effort, I love how you can whip up this delicious chipotle crema in just a matter of minutes, and put it on just about anything.
Here’s some ideas for how to serve up this magic sauce:
- Fajitas: There are the “essential” accoutrements for fajitas: sour cream, cheese, guacamole etc. And those don’t need to go anywhere, I just think we should add one to the list. Whenever we make chicken fajitas, we also make a batch of this wonder sauce. Consider this crema the quintessential topping you didn’t know you needed in life and thank me later.
- Breakfast Burritos: I wouldn’t have thought to add this to my breakfast routine, but Zach has been adding a dollop to his breakfast burrito in the mornings and it is pretty dang tasty. Why have a boring breakfast when you could have a zingy one?
- Chipotle Shrimp Tacos: Chipotle and shrimp are an underrated, but dynamic duo. Elevate your shrimp tacos with a drizzle of this crema and I am all about it! Throw in a little cotija and cilantro and you’ve got yourself a party!
- Taco Salad: In case you’re wondering, this sauce is just as great sandwiched in a taco shell as it is on a bed of greens for a carb-free option. I love to add fajita chicken and veggies over a bed of butter lettuce and top it off with this crema for a flavorful and healthy meal.
- Salmon: We pan-sear salmon at least once a week and a little dollop of this crema on top is pure gold. The healthy fats in salmon are well-balanced by the touch of spice from the crema – it’s perfection!

Chipotle Crema
A smoky and spicy crema that's simply irresistible.
Ingredients
- 1 cup light sour cream
- 2 chipotle peppers in adobo
- 3 tablespoons adobo sauce
- 1 clove minced garlic
- 1/2 tsp salt
Instructions
- Combine all ingredients in a food processor and blend until smooth.
- Store in an airtight container in the fridge for up to a week and enjoy!

I have made a similar “crema” using greek yogurt instead of sour cream. This can also be added to avocados to make a spicy, creamy guacamole. (Zach’s Aunt!)
